  • 1/2 cup (120 ml) elderberry syrup
  • 1/4 cup (60 ml) honey (raw or local)
  • 2 tablespoons (30 ml) fresh lemon juice
  • 3 tablespoons (about 30 grams) unflavored gelatin powder
  • 1/2 cup (120 ml) cold water
  • Optional: a pinch of sea salt

Instructions

  1. Pour 1/2 cup cold water into a medium mixing bowl, then sprinkle 3 tablespoons of unflavored gelatin evenly over the surface. Let it sit for 5 minutes to bloom.
  2. In a small saucepan or microwave-safe bowl, combine 1/2 cup elderberry syrup, 1/4 cup honey, and 2 tablespoons fresh lemon juice. Warm gently over low heat or in 30-second microwave bursts until honey dissolves and mixture is warm but not boiling (around 110°F or 43°C).
  3. Pour the warm elderberry-honey-lemon mixture over the bloomed gelatin. Whisk immediately and briskly until gelatin dissolves completely and mixture is smooth, about 2-3 minutes.
  4. Optionally, add a pinch of sea salt and stir gently.
  5. Carefully spoon or pour the mixture into silicone gummy molds or a lined small baking pan.
  6. Place molds or pan in the refrigerator for at least 2 hours until gummies are firm.
  7. Remove gummies from molds or cut into squares if using a pan. Store in an airtight container in the fridge for up to 2 weeks.

Notes

Warm the syrup mixture gently to avoid boiling which reduces gelatin’s setting power. Bloom gelatin in cold water first to avoid lumps. Chill gummies at least 2 hours for best texture. Adjust gelatin amount if gummies are too soft or too firm. For vegan option, substitute gelatin with agar-agar powder (about 2 teaspoons) and boil mixture until dissolved.
