  • 6 slices thick-cut bacon
  • 4 slices sharp cheddar cheese
  • 4 burger buns (brioche or potato rolls recommended)
  • ½ cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1 tablespoon ketchup
  • 1 tablespoon dill pickle relish
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • Lettuce (iceberg or romaine)
  • 4 thick slices ripe tomato
  • Thinly sliced red onion
  • Salt and pepper to taste
  • Butter for toasting buns

Instructions

  1. Prepare the secret sauce by mixing mayonnaise, yellow mustard, ketchup, dill pickle relish, garlic powder, and smoked paprika in a small bowl until smooth. Refrigerate while cooking.
  2. Cook the bacon in a cold skillet over medium heat for 8-10 minutes until crispy, turning occasionally. Drain on paper towels.
  3. Divide ground beef into 4 equal portions and shape into patties about ¾ inch thick with a slight indentation in the center. Season with salt and pepper.
  4. Heat skillet or grill pan over medium-high heat. Cook patties for 4-5 minutes per side for medium doneness. Add a slice of cheddar cheese on top during the last 1-2 minutes and cover to melt.
  5. Slice and toast buns lightly in butter on a separate pan or under a broiler until golden brown.
  6. Assemble burgers by spreading secret sauce on bottom bun, adding lettuce, tomato slice, cheesy patty, crispy bacon strips, and red onion slices. Top with more sauce and the top bun.
  7. Serve immediately with your favorite sides.

Notes

Do not press down on patties while cooking to keep them juicy. Let patties rest 3-5 minutes after cooking to redistribute juices. The secret sauce tastes better after sitting in the fridge for a few hours or overnight. Cook bacon slowly in a cold pan for best crispiness. Toast buns to prevent sogginess.
