  • 1 pound (450g) ground beef (80/20 blend)
  • 6 slices thick-cut bacon
  • 4 oz (115g) blue cheese, crumbled
  • 2 potato buns, lightly toasted
  • 1 tablespoon yellow mustard
  • 2 tablespoons mayonnaise
  • 4 thin pickle slices
  • 1 tablespoon unsalted butter, softened
  • Salt and freshly cracked black pepper to taste

Instructions

  1. Prepare the bacon: Lay bacon slices on a foil-lined baking sheet and bake at 400°F (200°C) for 10-12 minutes until crispy but flexible, or pan-fry over medium heat until golden. Drain on paper towels and set aside.
  2. Form the beef balls: Divide ground beef into 4 equal portions (~4 oz each). Gently roll into loose balls without overworking. Season lightly with salt and pepper.
  3. Toast the buns: Butter the insides of the potato buns and toast in a skillet over medium heat until golden brown. Set aside.
  4. Cook the patties: Heat cast iron skillet over medium-high heat until smoking hot. Place two beef balls in the pan and immediately smash each down to about 1/4-inch thickness. Season with salt and pepper. Cook 2-3 minutes until edges are crispy and browned.
  5. Flip and add cheese: Flip patties carefully, top each with crumbled blue cheese, and cook another 2-3 minutes until cheese melts and patties are cooked through but still juicy.
  6. Assemble the burgers: Spread mayonnaise on bottom bun and mustard on top bun. Stack two patties on each bun, add 3 slices of bacon and pickle slices. Close sandwich and press gently.
  7. Serve immediately while hot and juicy.

Notes

Do not overwork the meat when forming balls to keep patties tender. Use a very hot skillet for a perfect crust. Press patties firmly once, do not repeatedly smash. Crumble blue cheese just before cooking for freshness. Bacon should be crispy but flexible. For gluten-free, use gluten-free buns or lettuce wraps. Baking bacon on a wire rack prevents burning and keeps it crispy.
