A simple and fun summer party treat combining fresh strawberry puree, real lemonade, and vodka for a refreshing, zesty, and boozy jello shot perfect for warm gatherings.

  • 1 cup fresh strawberries, hulled and chopped
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 1/3 cup granulated sugar
  • 3 tablespoons unflavored gelatin (about 21 grams)
  • 1 cup cold water
  • 3/4 cup vodka (180 ml)
  • Optional: lemon zest from one lemon, finely grated
  • Optional: fresh mint leaves for garnish

Instructions

  1. Puree the hulled and chopped strawberries in a blender or food processor until smooth, about 30 seconds. Set aside.
  2. Sprinkle the unflavored gelatin evenly over 1 cup of cold water in a medium bowl. Let it sit for 5 minutes until spongy.
  3. Gently warm the gelatin mixture in short bursts in the microwave (15-20 seconds) or over a double boiler until fully dissolved and clear. Do not boil.
  4. In a large mixing bowl, stir together the fresh lemon juice and granulated sugar until the sugar is mostly dissolved, about 1-2 minutes.
  5. Slowly add the dissolved gelatin to the lemon-sugar mixture while whisking continuously. Fold in the fresh strawberry puree until smooth and evenly pink.
  6. Pour in the vodka and, if using, the lemon zest. Stir gently to combine.
  7. Ladle the mixture into shot cups or silicone molds, filling each about 3/4 full. Leave space at the top to avoid spills.
  8. Place the filled containers on a flat tray and refrigerate for at least 4 hours, preferably overnight, until fully set and slightly firm.
  9. Serve chilled, optionally garnished with a mint leaf or thin lemon slice.

Notes

Bloom gelatin properly by sprinkling evenly over cold water and letting it sit before heating. Avoid boiling gelatin to prevent loss of gelling power. Use fresh lemon juice and strawberries for best flavor. Chill on a flat surface for even setting. Prepare a day ahead for best flavor and texture. For non-alcoholic version, substitute vodka with sparkling water or extra lemonade. To clean gelatin residue, soak utensils immediately after use.
