A quick and easy frozen watermelon mint slushie with a spicy Tajin rim, perfect for cooling off on hot summer days with a refreshing and flavorful twist.

Ingredients

  • 4 cups (600g) seedless watermelon, cubed and frozen
  • 1/4 cup fresh mint leaves, loosely packed
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1 tablespoon simple syrup or honey (optional)
  • 1/4 cup (60ml) cold water, adjust as needed
  • 2 teaspoons Tajin seasoning per glass (for rimming)
  • Ice cubes (optional, for extra frostiness)

Instructions

  1. Freeze the watermelon cubes on a parchment-lined baking sheet for at least 3 hours or until solid.
  2. Pour Tajin seasoning onto a small plate. Rub a lime wedge around the rims of your glasses, then dip them into the Tajin to coat evenly. Set aside.
  3. In a high-speed blender, combine frozen watermelon cubes, fresh mint leaves, lime juice, simple syrup or honey (if using), and cold water. Blend on high for about 1 minute until smooth and slushy.
  4. Adjust consistency by adding more water if too thick or a few ice cubes if too thin, blending again as needed.
  5. Taste and adjust flavor by adding more lime juice or sweetener if desired, blending briefly to mix.
  6. Pour the slushie into the Tajin-rimmed glasses and garnish with a mint sprig or lime wheel. Serve immediately.

Notes

Freeze watermelon cubes thoroughly for best slush texture. Blend fresh mint leaves directly for even flavor without bitterness. Rim glasses with Tajin just before serving to avoid mess. Can add a splash of tequila or rum for an alcoholic version. Substitute Tajin with chili powder, lime zest, and salt if unavailable.
