  • 8 ounces Andouille sausage, sliced (or any smoked Cajun-style sausage)
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 1 medium bell pepper (red or green), diced
  • 3 cloves garlic, minced
  • 2 teaspoons Cajun seasoning (adjust to taste)
  • 2 1/2 cups chicken broth
  • 1 cup heavy cream
  • 8 ounces uncooked penne pasta (whole wheat or gluten-free pasta can substitute)
  • 1/2 cup grated Parmesan cheese
  • Chopped fresh parsley, for garnish (optional)
  • Salt and black pepper, to taste

Instructions

  1. Slice the Andouille sausage into about 1/4-inch thick rounds. Dice the onion and bell pepper, mince the garlic.
  2. Heat olive oil over medium heat in a large deep skillet or sauté pan. Add the sausage slices and sauté for 4-5 minutes until they start browning and release their smoky aroma, stirring occasionally.
  3. Add diced onion and bell pepper; cook for 3-4 minutes until softened but not mushy. Toss in the minced garlic and cook for another 30 seconds until fragrant.
  4. Sprinkle in the Cajun seasoning and stir well to coat the sausage and veggies evenly.
  5. Pour in chicken broth and heavy cream, stirring to combine and scraping up any browned bits from the pan bottom.
  6. Add the uncooked penne pasta and stir to submerge it in the liquid. Increase heat slightly to bring to a gentle boil.
  7. Reduce heat to medium-low and simmer uncovered for about 15 minutes, stirring every few minutes until pasta is tender and sauce has thickened. Add a splash of broth if it looks too dry.
  8. Stir in grated Parmesan cheese until melted and creamy. Taste and season with salt and freshly ground black pepper as needed.
  9. Remove from heat and let sit for a couple of minutes to thicken further. Sprinkle with chopped parsley before serving.

Notes

If sauce is too thick before pasta is fully cooked, add extra broth or water. If too thin at the end, increase heat briefly to reduce. Use freshly grated Parmesan for best texture. Adjust Cajun seasoning to control spice level. For dairy-free, substitute heavy cream with coconut milk and Parmesan with vegan alternative or nutritional yeast. For gluten-free, use gluten-free pasta and check sausage ingredients.
