  • 1 pound baby potatoes, halved or quartered (Yukon gold or red potatoes recommended)
  • 2 ears corn on the cob, cut into 2-inch pieces (or 1 cup frozen corn kernels)
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons fresh parsley, chopped (optional)
  • Salt and pepper, to taste
  • 1/2 teaspoon smoked paprika (optional)

Instructions

  1. Wash and cut baby potatoes in halves or quarters. Toss with 1 tablespoon melted butter, salt, pepper, and smoked paprika if using. Let sit for about 10 minutes.
  2. In a separate bowl, mix 4 tablespoons melted butter, minced garlic, lemon juice, salt, and pepper to make the garlic butter sauce.
  3. Slice corn into 2-inch pieces and toss with salt and pepper.
  4. Tear off four 12×12 inch sheets of heavy-duty aluminum foil. Divide potatoes, corn, and shrimp evenly among the foil sheets.
  5. Pour garlic butter sauce over the shrimp and veggies, coating well.
  6. Seal the foil packets tightly, leaving space inside for steam. Double-wrap if desired.
  7. Cook packets on a preheated grill over medium heat or in a 400°F (200°C) oven for 15-18 minutes, flipping halfway if grilling.
  8. Check doneness by piercing a potato with a fork and ensuring shrimp are pink and opaque. Cook longer if needed.
  9. Sprinkle fresh parsley over packets before serving.
