  • 1 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/3 cup (75g) unsalted butter, melted
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup (130g) semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with liners.
  2. In a medium bowl, mash 3 ripe bananas until smooth but still a bit chunky (about 1 1/2 cups).
  3. In a large bowl, whisk together 1 3/4 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon salt, and 1 teaspoon ground cinnamon.
  4. In the banana bowl, add 1/3 cup melted unsalted butter, 1/2 cup granulated sugar, and 1/4 cup brown sugar. Whisk until smooth.
  5. Beat in 2 large eggs and 1 teaspoon vanilla extract until the mixture is light and fluffy, about 1-2 minutes.
  6. Slowly fold the dry ingredients into the wet banana mixture using a spatula until just combined; do not overmix.
  7. Gently stir 3/4 cup semi-sweet chocolate chips into the batter.
  8. Spoon batter evenly into the 12 muffin liners, filling about 3/4 full.
  9. Bake for 18-22 minutes, checking at 18 minutes with a toothpick; it should come out with a few moist crumbs.
  10. Remove from oven and let muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

For gluten-free, substitute all-purpose flour with almond flour (use slightly less). For dairy-free, replace butter with coconut oil and use dairy-free chocolate chips. Toss chocolate chips in a little flour before folding in to prevent sinking. Avoid overmixing batter to keep muffins tender. Tent with foil if tops brown too quickly.
