Instructions

  1. Brown the butter: Melt 1 cup unsalted butter over medium heat in a light-colored saucepan, stirring frequently until golden brown and nutty (about 5-7 minutes). Remove from heat and let cool slightly.
  2. Make the dough: In a large bowl, whisk together 2 1/2 cups flour, 1/4 cup sugar, and 1/2 teaspoon salt. Slowly pour in the warm brown butter, mixing until crumbly. Add 3 tablespoons ice-cold water gradually until dough comes together; add extra tablespoon if needed.
  3. Chill the dough: Form dough into a 1-inch thick disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  4. Prepare the peaches: Preheat oven to 400°F. Toss sliced peaches with honey, lemon juice, cinnamon (if using), and 1 tablespoon flour. Spread on parchment-lined baking sheet and roast 15-20 minutes until soft and juices thicken. Let cool.
  5. Roll out the dough: On a floured surface, roll chilled dough into a 12-inch circle about 1/4-inch thick. Transfer to parchment-lined baking sheet.
  6. Assemble the galette: Spoon roasted peaches onto dough center, leaving a 2-inch border. Fold edges over fruit, pleating to create rustic edge. Brush edges with beaten egg and sprinkle coarse sugar on top.
