  • ⅓ cup (113 g) honey
  • 23 chipotle peppers in adobo sauce, minced with 2 tbsp adobo sauce
  • 4 cloves garlic, minced
  • 1 tbsp onion powder
  • 1 tbsp smoked paprika
  • 1 tsp cumin
  • Salt and black pepper to taste
  • 2 tbsp apple cider vinegar
  • 12 small slider buns
  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 12 jalapeños, finely diced (seeds included for heat)
  • ½ cup (120 ml) mayonnaise
  • 2 tbsp lime juice
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from the pork shoulder and pat dry with paper towels. (5 minutes)
  2. In a small bowl, combine honey, minced chipotle peppers with adobo sauce, minced garlic, onion powder, smoked paprika, cumin, salt, and pepper. Stir well to make the honey chipotle sauce. (5 minutes)
  3. Rub the honey chipotle sauce generously all over the pork shoulder. Place the pork in the slow cooker. (5 minutes)
  4. Pour apple cider vinegar around the pork in the slow cooker. (1 minute)
  5. Cover and cook on low for 6-7 hours or until the pork is tender enough to shred easily. (6-7 hours)
  6. Remove the pork from the slow cooker and shred finely using two forks or meat claws, discarding large chunks of fat. (10 minutes)
  7. Skim excess fat from the cooking liquid, then add some of the liquid back to the shredded pork and toss gently to coat. (5 minutes)
  8. In a large bowl, combine shredded cabbage, shredded carrots, and diced jalapeños. In a separate bowl, whisk together mayonnaise, lime juice, honey, salt, and pepper. Pour dressing over the veggies and toss until evenly coated. (10 minutes)
  9. Optionally, lightly toast the slider buns in a skillet or oven until golden brown. (5 minutes)
  10. Assemble sliders by placing a generous scoop of pulled pork on each bun bottom, topping with jalapeño coleslaw, and crowning with the bun top. Serve immediately. (5 minutes)
