  • 8 large garlic cloves, peeled and minced
  • 1 cup (240 ml) raw apple cider vinegar with ‘the mother’
  • 1/2 cup (120 ml) raw honey
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon fresh turmeric, grated (or 1 teaspoon ground turmeric)
  • 1 teaspoon cracked black peppercorns
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Optional: 1 cinnamon stick

Instructions

  1. Peel and finely mince 8 large garlic cloves. Grate 1 tablespoon each of fresh ginger and fresh turmeric (or use 1 teaspoon ground turmeric). Estimated time: 10 minutes.
  2. Place the minced garlic, grated ginger, turmeric, 1 teaspoon cracked black peppercorns, 1/2 teaspoon cayenne pepper, and optional cinnamon stick into a quart-sized glass jar.
  3. Pour in 1 cup (240 ml) raw apple cider vinegar and 1/2 cup (120 ml) raw honey. Note: Honey may resist mixing at first; gently stir or shake after sealing the jar to incorporate.
  4. Use a spoon or small whisk to blend all ingredients until the honey is mostly incorporated with the vinegar and spices. The mixture will be thick and textured with visible bits of garlic and spices.
  5. Seal the jar tightly and store it in the refrigerator. Let it sit for at least 24 hours before using to allow flavors to meld. Flavor develops more intensely over the first 3 days.
  6. Stir or shake gently before each use. Take 1 tablespoon (15 ml) as a tonic, straight or diluted with warm water or herbal tea. Use a spoon rather than pouring due to thick texture.

Notes

Use fresh garlic and spices for best flavor and texture. Adjust cayenne pepper to control heat. Refrigerate to preserve texture and prevent fermentation. If garlic chunks are too strong, strain after resting. Honey can be substituted with maple syrup or agave for a vegan version, but texture will be thinner. Add fresh lemon juice in warmer months for brightness. Can add herbs like rosemary or fruit slices for variations.
