  • 1 large whole wheat or spinach tortilla wrap (about 10 inches diameter)
  • Greek Yogurt Sauce:
  • 1/4 cup plain Greek yogurt
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon chopped fresh dill or parsley (optional)
  • 1 small garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Prepare the veggies: Wash and dice bell peppers, chop spinach roughly, mince onion, and halve cherry tomatoes. Set aside.
  2. Whisk the egg whites in a mixing bowl until slightly frothy. Season lightly with salt and pepper.
  3. Heat 1 teaspoon olive oil in a medium non-stick skillet over medium heat. Add diced onions and bell peppers and cook until softened and translucent, about 3 minutes.
  4. Add spinach and cherry tomatoes to the skillet and cook for another 1-2 minutes until spinach wilts and tomatoes soften but keep their shape.
  5. Reduce heat to medium-low and pour the whisked egg whites over the sautéed veggies. Let sit undisturbed for about 30 seconds, then gently stir and fold with a spatula. Cook slowly until eggs are just set but still moist, about 3-4 minutes.
  6. While eggs cook, mix plain Greek yogurt, lemon juice, minced garlic, and chopped herbs in a small bowl. Season with salt and pepper to taste.
  7. Warm the tortilla briefly in a dry skillet or microwave until pliable and warm.
  8. Spoon the egg white veggie scramble onto the center of the tortilla. Drizzle or dollop the Greek yogurt sauce evenly over the scramble. Fold the sides and roll tightly to form a wrap.
  9. Optional: For a crispy exterior, place the wrap seam-side down on a skillet or panini press and toast until golden and warm, about 2 minutes.
