Fresh Watermelon Feta Skewers with Easy Mint Balsamic Glaze

A refreshing and easy-to-make summer snack featuring juicy watermelon cubes, crumbly feta, fresh mint leaves, and a homemade balsamic glaze. Perfect for parties, picnics, or a light appetizer.

  • Seedless watermelon, cut into 1-inch cubes
  • Crumbled feta cheese (preferably firm and tangy)
  • Fresh mint leaves, whole and rinsed
  • ½ cup balsamic vinegar
  • 1 tablespoon honey or maple syrup (optional)
  • 1 teaspoon extra virgin olive oil (optional)
  • Pinch of salt and black pepper (optional)
  • Wooden or bamboo skewers, about 12 inches long, soaked in water for 30 minutes

Instructions

  1. Pour ½ cup balsamic vinegar into a small saucepan. Add 1 tablespoon honey or maple syrup if desired.
  2. Bring to a gentle simmer over medium heat and reduce, stirring occasionally, until thick and syrupy, about 10–15 minutes. Remove from heat and let cool completely.
  3. Cut the watermelon into 1-inch cubes, aiming for uniform size.
  4. Crumble the feta cheese into bite-sized pieces and pat dry the fresh mint leaves.
  5. Thread one watermelon cube, followed by a mint leaf (folded if large), then a small chunk of feta onto each skewer. Repeat to fill with 3–4 sets.
  6. Lightly sprinkle the assembled skewers with salt and black pepper if desired.
  7. Drizzle the cooled balsamic glaze over the skewers just before serving. Optionally, drizzle a little extra virgin olive oil.
  8. Arrange the skewers on a platter and serve immediately for best freshness.

Notes

Use firm, ripe watermelon to prevent cubes from falling apart. Reduce balsamic vinegar slowly over medium-low heat to avoid bitterness. Assemble skewers gently to avoid crushing watermelon. Store assembled skewers covered in the fridge up to 24 hours; add glaze just before serving. For a warm twist, briefly grill or broil skewers to caramelize glaze and soften watermelon.
