  • 24 fresh mint leaves, washed and patted dry
  • 3 tablespoons honey
  • 2 tablespoons fresh lime juice (from 1 large lime)
  • Pinch of sea salt (optional)
  • 12-inch wooden skewers (soaked in water for 15 minutes if grilling)

Instructions

  1. Soak wooden skewers in water for 15 minutes if you plan to grill later to prevent burning.
  2. Cut the watermelon into 1-inch cubes, aiming for about 4 cups total.
  3. Cube the feta cheese into pieces roughly the same size as the watermelon cubes, about 1 inch. If using crumbled feta, scoop small spoonfuls that can be skewered.
  4. Wash and dry the mint leaves thoroughly.
  5. In a small bowl, whisk together honey and fresh lime juice until smooth and well combined.
  6. Thread one watermelon cube, one mint leaf (folded if large), and one feta cube onto each skewer. Repeat this pattern 3-4 times per skewer without overcrowding.
  7. Arrange the skewers on a serving platter and drizzle the honey-lime mixture evenly over the top.
  8. Lightly sprinkle sea salt over the skewers if desired. Serve immediately or chill in the fridge for 10-15 minutes to meld flavors.
