A refreshing summer salad combining juicy watermelon, crisp cucumber, tangy feta, and a zesty Tajin seasoning for a perfect balance of sweet, salty, and spicy flavors.

  • 4 cups seedless watermelon, cubed (about 600 grams)
  • 2 medium English or Persian cucumbers, thinly sliced (about 300 grams)
  • 3/4 cup crumbled feta cheese (about 150 grams)
  • 1 to 1 1/2 teaspoons Tajin seasoning (adjust to taste)
  • 2 tablespoons fresh mint leaves, chopped
  • Juice of 1 medium lime (about 2 tablespoons)
  • 1 tablespoon extra virgin olive oil
  • Pinch of salt and pepper, to taste

Instructions

  1. Cut seedless watermelon into roughly 1-inch cubes and transfer to a mixing bowl.
  2. Trim ends of cucumbers and slice thinly into 1/4 inch half-moons; add to the bowl with watermelon.
  3. Crumble feta cheese over the fruit and cucumber; let soften slightly if very cold.
  4. Chop fresh mint leaves finely and sprinkle over the salad.
  5. In a small bowl, whisk together lime juice, olive oil, Tajin seasoning, salt, and pepper.
  6. Pour dressing over the salad and toss gently with a large spoon or salad tongs to coat evenly without breaking the watermelon cubes.
  7. Let the salad rest at room temperature for 5 to 10 minutes before serving to allow flavors to meld.

Notes

Use firm, ripe watermelon for best texture. Slice cucumbers about 1/4 inch thick to maintain crunch. Adjust Tajin seasoning to taste to control spice level. Crumble feta just before mixing to keep it crumbly. Let salad rest 5-10 minutes before serving to enhance flavors. Store leftovers in airtight container up to 2 days; drain excess liquid before serving again.
