A quick and refreshing summer drink combining the tartness of fresh lemons, sweetness of strawberries, and a cool hint of mint, blended into a perfect icy slushie.

  • 2 cups fresh strawberries, hulled and halved
  • 3 large lemons, juiced (about 1/2 cup fresh lemon juice)
  • 1/2 cup granulated sugar (adjust to taste)
  • 1 cup water
  • 1012 fresh mint leaves, gently bruised
  • 3 cups ice cubes

Instructions

  1. In a mixing bowl, combine freshly squeezed lemon juice (about 1/2 cup) with 1/2 cup granulated sugar and 1 cup water. Stir until sugar dissolves completely (2-3 minutes). Strain if a pulp-free lemonade is preferred.
  2. Hull and halve 2 cups of fresh strawberries. Gently bruise 10-12 fresh mint leaves by clapping them between your hands to release aroma.
  3. Add the lemonade base, strawberries, bruised mint leaves, and 3 cups of ice cubes to a blender. Pulse on high for 20-30 seconds at a time until smooth but slushy texture is achieved (about 1-2 minutes total).
  4. Taste and adjust sweetness by adding a teaspoon of sugar or honey if desired. Add more water if too tart or more strawberries if mint flavor is too strong. Pulse briefly to combine.
  5. Serve immediately in chilled glasses. Garnish with a sprig of mint and a thin lemon wheel if desired. Makes about 2-3 servings.

Notes

Use fresh, ripe strawberries for best flavor. Frozen strawberries can be used but reduce ice by half. Bruise mint leaves gently to avoid bitterness. Use short pulses when blending ice to avoid watery texture. Serve immediately for best icy texture. Store lemonade base and strawberry-mint mix separately if preparing ahead.
