  • 2 tablespoons Greek yogurt
  • 2 tablespoons fresh parsley, finely chopped

  • 1 small red bell pepper, finely diced
  • 1 small cucumber, peeled and diced
  • 1 medium carrot, grated
  • 1 teaspoon fresh lemon juice
  • Salt and pepper to taste
  • Optional: smoked paprika or cayenne pepper for a little kick

Instructions

  1. In a medium mixing bowl, combine 8 oz softened cream cheese with 2 tablespoons Greek yogurt. Mix until smooth and creamy, about 2-3 minutes.
  2. Add 2 tablespoons finely chopped fresh parsley, 1 tablespoon chopped chives, and 1 teaspoon fresh lemon juice. Stir to combine evenly.
  3. Fold in 1 small finely diced red bell pepper, 1 small peeled and diced cucumber, and 1 medium grated carrot. Season with salt and pepper to taste. Add a pinch of smoked paprika or cayenne if desired.
  4. Lay one flour tortilla flat on a clean surface. Spread about 1/4 of the creamy veggie cheese mixture evenly over the entire surface, leaving about 1/2 inch at the edges bare.
  5. Starting from one edge, roll the tortilla tightly but gently to avoid tearing. Wrap the roll in plastic wrap and place in the fridge for 15-20 minutes to firm up.
  6. After chilling, unwrap and use a sharp knife to slice the roll into 1-inch thick pieces. Secure each pinwheel with a toothpick or chive strand if needed.
  7. Repeat spreading, rolling, chilling, and slicing with the remaining tortillas and filling.
  8. Arrange the pinwheels on a platter and serve fresh. Best enjoyed within a couple of hours but can be refrigerated up to 24 hours.
