Instructions

  1. Prepare the graham crumble: Crush 1 1/2 cups (150g) of graham crackers into fine crumbs using a food processor or rolling pin. Mix in 5 tablespoons (70g) of melted unsalted butter until the crumbs are evenly coated and hold together when pressed. Set aside.
  2. Whip the cream cheese: In a large bowl, beat 8 ounces (225g) of softened cream cheese with 1/2 cup (60g) powdered sugar and 1 teaspoon vanilla extract until smooth and creamy, about 3-4 minutes with a mixer.
  3. Whip the heavy cream: In a separate chilled bowl, whip 1 cup (240ml) heavy cream until soft peaks form. Slowly fold the whipped cream into the cream cheese mixture until fully combined and fluffy.
  4. Prepare the berries: Toss 1 cup (150g) sliced strawberries with 1 tablespoon granulated sugar to macerate, letting them sit for 10 minutes. Keep 1 cup (150g) fresh blueberries ready to layer.
  5. Assemble the parfaits: In serving glasses, layer about 2 tablespoons of graham crumble, followed by a spoonful of cheesecake filling, then a layer of strawberries, another graham crumble layer, more cheesecake filling, and finish with fresh blueberries. Repeat layers as desired.
  6. Chill before serving: Refrigerate the parfaits for at least 1 hour to let flavors meld and the filling set slightly.

Chill cream cheese to room temperature before mixing for smooth texture. Use powdered sugar in filling to avoid grit. Fold whipped cream gently into cream cheese mixture to keep light texture.
