A refreshing and soothing lavender lemonade sweetened naturally with honey, perfect for hot days and easy to make with simple ingredients.

  • 2 tablespoons fresh or dried culinary-grade lavender buds
  • 4 to 5 medium-sized fresh lemons (about 1 cup lemon juice)
  • 1/3 cup (113 g) honey, raw or local
  • 5 cups filtered water, divided
  • Ice cubes (optional, for serving)
  • Optional: fresh mint sprigs or lemon slices for garnish

Instructions

  1. Bring 2 cups (475 ml) of water to a gentle boil. Remove from heat and add the lavender buds. Cover and let steep for about 10 minutes.
  2. Strain the lavender infusion through a fine mesh strainer or cheesecloth into a large pitcher, removing all buds.
  3. While the lavender water is still warm, stir in 1/3 cup (113 g) of honey until it dissolves completely.
  4. Roll lemons on the counter, cut in half, and juice to yield about 1 cup (240 ml) fresh lemon juice. Strain to remove seeds and pulp.
  5. Add the lemon juice to the pitcher with the lavender-honey mixture and stir well.
  6. Pour in the remaining 3 cups (710 ml) of cold water to the pitcher and stir to combine. Adjust sweetness by adding more honey if desired.
  7. Chill the lemonade in the refrigerator for at least 1 hour. Serve over ice cubes with optional lemon slices or fresh mint sprigs.

Notes

Use culinary-grade lavender to avoid bitterness. Do not steep lavender longer than 15 minutes to prevent bitterness. Warm lavender water helps honey dissolve smoothly. Adjust sweetness gradually. Fresh lemon juice is preferred for best flavor. For a fizzy version, replace 1 cup of still water with sparkling water before serving.
