  • 1 cup baby carrots or carrot sticks
  • 1 cup cucumber slices (English cucumber preferred)
  • ½ cup cherry tomatoes, halved
  • ½ cup snap peas or green beans, blanched
  • Whole grain or multigrain crackers (e.g., Triscuit)
  • Optional: small handful of mixed nuts or olives

Instructions

  1. In a medium bowl, combine ½ cup plain Greek yogurt, 1 tablespoon ranch seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir well until smooth.
  2. Add the chicken breasts to the bowl and coat evenly with the ranch yogurt mixture. Cover and refrigerate for at least 30 minutes or up to 4 hours.
  3. While the chicken marinates, wash and slice the veggies. Blanch snap peas or green beans by boiling for 2 minutes then plunge into ice water. Pat dry.
  4. Heat 1 tablespoon olive oil in a skillet or grill pan over medium heat. Remove chicken from marinade, letting excess drip off. Cook chicken breasts for about 5-7 minutes per side until golden brown and internal temperature reaches 165°F (74°C).
  5. Transfer chicken to a plate and let rest for 5 minutes. Slice into bite-sized strips or cubes.
  6. Arrange sliced chicken, prepared veggies, and crackers neatly in a bento box or meal prep container. Add optional extras like nuts or olives and a small container of extra ranch yogurt for dipping.

Notes

Marinate chicken for at least 30 minutes but no longer than 6 hours to avoid mushy texture. Rest chicken after cooking to keep it juicy. Blanch veggies briefly and plunge into ice water to maintain crispness. Store crackers separately to keep them crunchy. For dairy-free option, substitute Greek yogurt with plain unsweetened coconut yogurt and use dairy-free ranch seasoning.
