Fresh Greek Yogurt Parfait Recipe Easy Homemade Honey Granola and Mixed Berries

A quick and easy parfait combining creamy Greek yogurt, homemade honey granola, and fresh mixed berries for a nourishing and delicious breakfast or snack.

  • Greek yogurt, full-fat or 2% (for creaminess and protein)
  • Honey (to drizzle and sweeten naturally)
  • 3 cups old-fashioned rolled oats
  • 1 cup chopped raw almonds and walnuts
  • 1 teaspoon ground cinnamon
  • Pinch of sea salt
  • 1/3 cup honey
  • 1/4 cup melted coconut oil or unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup blueberries
  • 1/2 cup raspberries
  • 1/2 cup blackberries (optional)

Instructions

  1. Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, combine 3 cups (270 g) rolled oats, 1 cup (120 g) chopped raw almonds and walnuts, 1 teaspoon ground cinnamon, and a pinch of sea salt. Stir well.
  3. In a smaller bowl, whisk together 1/3 cup (80 ml) honey, 1/4 cup (60 ml) melted coconut oil or unsalted butter, and 1 teaspoon vanilla extract until smooth.
  4. Pour the wet mixture over the dry ingredients and stir to coat every oat and nut cluster.
  5. Spread the granola evenly on the prepared baking sheet and press lightly to flatten slightly.
  6. Bake for 20 to 25 minutes, stirring halfway through to ensure even toasting. Remove when golden and fragrant.
  7. Let the granola cool completely on the baking sheet.
  8. Rinse and gently pat dry 1 cup (150 g) strawberries, 1 cup (150 g) blueberries, 1/2 cup (75 g) raspberries, and optional 1/2 cup (75 g) blackberries. Slice larger berries if needed.
  9. Assemble the parfait by layering 1/3 cup (80 g) Greek yogurt, a light drizzle of honey (about 1 teaspoon), a layer of mixed berries (about 1/4 cup), and a handful (about 1/4 cup) of cooled honey granola. Repeat layers until glass is full, finishing with berries and granola on top.
  10. Serve immediately for best crunch or refrigerate up to 1 hour if prepping ahead.

Notes

Stir granola halfway through baking to avoid burning. Let yogurt sit at room temperature 10 minutes before serving for creamier texture. Store granola separately to maintain crunch. For dairy-free, use coconut or almond yogurt and swap honey for maple syrup.
