A quick and refreshing summer snack combining crisp cucumber, juicy watermelon, tangy feta, and fresh mint for a perfect sweet and salty bite.

Ingredients

  • Seedless watermelon, cut into 1-inch cubes
  • English cucumber, peeled and cut into 1-inch cubes
  • Feta cheese, crumbled
  • Fresh mint leaves, finely chopped
  • Extra virgin olive oil, a light drizzle (optional)
  • Freshly ground black pepper, to taste
  • Sea salt or flaky salt, a pinch

Instructions

  1. Chill the watermelon and cucumber cubes in the refrigerator for about 30 minutes.
  2. Peel the English cucumber and cut it into 1-inch cubes, matching the size of the watermelon cubes.
  3. In a mixing bowl, gently combine the chilled watermelon and cucumber cubes.
  4. Sprinkle crumbled feta evenly over the fruit and cucumber mixture.
  5. Mince fresh mint leaves finely and sprinkle over the mixture.
  6. Drizzle a little extra virgin olive oil over the top, then add a pinch of flaky sea salt and freshly ground black pepper. Taste and adjust seasoning if needed.
  7. Serve immediately on a platter with toothpicks for easy grabbing.

Notes

For best results, use firm, ripe watermelon and fresh mint leaves. Assemble just before serving to avoid sogginess. Optional olive oil adds subtle richness. Can substitute feta with vegan cheese or tofu for dairy-free version.
