  • 1 (15 oz) can whole kernel corn, drained (or fresh grilled corn)
  • 1 cup cherry tomatoes, halved
  • 1 medium red bell pepper, diced
  • 3 green onions, thinly sliced
  • ½ cup fresh cilantro, chopped
  • 2 medium ripe but firm avocados
  • ¼ cup sour cream (or Greek yogurt or dairy-free yogurt/cashew cream)
  • 2 tablespoons fresh lime juice
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • Salt and black pepper to taste
  • Optional: 1 small jalapeño, finely chopped
  • Optional: 1 tablespoon olive oil

Instructions

  1. Drain and rinse the black beans and corn thoroughly. Set aside.
  2. Halve the cherry tomatoes, dice the red bell pepper, thinly slice the green onions, finely chop the jalapeño if using, and chop the fresh cilantro.
  3. Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl. Mash with a fork until creamy but still slightly chunky.
  4. Stir in sour cream and fresh lime juice into the mashed avocado to create a creamy base.
  5. Add ground cumin, chili powder, salt, and black pepper to the creamy mixture. Mix well and adjust seasoning to taste.
  6. Gently fold in the black beans, corn, tomatoes, red bell pepper, green onions, jalapeño, and cilantro. Toss carefully to avoid mashing the veggies.
  7. Chill the cowboy caviar for at least 30 minutes to let flavors meld, or serve immediately.
  8. Optional: Drizzle olive oil before serving and stir gently.

Use ripe but firm avocados to avoid runny texture. Use fresh lime juice for best flavor. Fold ingredients gently to keep texture contrast. Cover tightly when chilling to prevent avocado browning.
