Fresh Cowboy Caviar Recipe with Avocado Lime Cumin Dressing

A bright and tangy cowboy caviar featuring black beans, corn, tomatoes, and avocado tossed in a creamy avocado lime cumin dressing. Perfect as a fresh, zesty side or appetizer.

  • 1 cup canned black beans, rinsed and drained
  • 1 cup canned whole kernel corn, drained (fresh or frozen corn works too)
  • 1 cup cherry tomatoes, halved
  • 1 small red bell pepper, finely diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, roughly chopped
  • 1 ripe avocado, diced
  • For the dressing:
  • 1 ripe avocado
  • Juice of 2 fresh limes (about 3 tablespoons)
  • 1 teaspoon ground cumin
  • 1 garlic clove, minced
  • 2 tablespoons olive oil (extra virgin)
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon honey or agave syrup (optional)
  • 23 tablespoons water (to thin dressing)

Instructions

  1. Rinse and drain the black beans and corn well. Chop the cherry tomatoes in half, dice the red bell pepper finely, mince the red onion, roughly chop the cilantro, and dice the ripe avocado. Place all in a large mixing bowl.
  2. In a blender or food processor, combine the ripe avocado, lime juice, ground cumin, minced garlic, olive oil, salt, pepper, and honey or agave syrup if using. Blend until smooth. Add water a tablespoon at a time to thin the dressing to your preferred consistency. Alternatively, mash avocado and whisk in other ingredients if no blender is available.
  3. Pour the creamy dressing over the bean and veggie mixture. Gently toss to coat all ingredients evenly, being careful not to mash the avocado chunks.
  4. Taste and adjust salt, pepper, or lime juice as needed. Chill in the fridge for 15-20 minutes if time allows to let flavors meld, or serve immediately.
  5. Serve in a bowl or individual dishes, garnished with extra cilantro leaves or a sprinkle of cumin if desired. Enjoy with tortilla chips, on tacos, or over grilled meats.
