  • 3/4 oz (22 ml) Fresh Lemon Juice, freshly squeezed
  • 1/2 oz (15 ml) Simple Syrup (equal parts sugar and water dissolved)
  • 1 large Egg White (optional, for frothy texture)
  • 34 Smoked Cherries per drink (fresh cherries smoked over wood chips or store-bought smoked cherries)
  • Ice (plenty for shaking and serving)

Instructions

  1. Smoke the cherries: Prepare smoker or grill with wood chips and set to low heat (~225°F/107°C). Place pitted cherries in a shallow pan or on a rack and smoke for 20-30 minutes until they absorb a gentle smoky aroma. Set aside to cool.
  2. Juice the lemons: Squeeze fresh lemons to get 3/4 oz (22 ml) juice per cocktail. Strain out seeds and pulp.
  3. Prepare simple syrup: Combine equal parts sugar and water in a saucepan, heat gently until sugar dissolves, then cool.
  4. Combine ingredients: In a cocktail shaker, add 2 oz bourbon, 3/4 oz lemon juice, 1/2 oz simple syrup, and egg white if using.
  5. Dry shake: Shake vigorously without ice for about 15 seconds to emulsify the egg white and create froth.
  6. Add ice and shake again: Fill shaker halfway with ice and shake for 20-30 seconds until well chilled.
  7. Strain into glass: Strain cocktail into a rocks glass filled with fresh ice.
  8. Garnish: Skewer 2-3 smoked cherries and place on top or drop one into the drink.

Notes

Dry shaking without ice is key to creating a silky frothy texture when using egg white. Do not over-smoke cherries to avoid bitterness. Fresh lemon juice is essential for bright acidity. Smoked cherries can be prepped ahead and stored in an airtight container in the fridge for up to 5 days. For non-alcoholic versions, use whiskey-flavored non-alcoholic spirit or smoked black tea concentrate.
