  • 1012 medium-sized fresh jalapeño peppers, sliced into 1/4 inch rings
  • 45 large garlic cloves, peeled and lightly crushed
  • 34 sprigs fresh oregano (or 1 teaspoon dried oregano)
  • 1 cup (240 ml) white vinegar
  • 1 cup (240 ml) water
  • 1 tablespoon sugar
  • 1 teaspoon kosher salt or pickling salt
  • 1/2 teaspoon whole black peppercorns (optional)

Instructions

  1. Rinse the jalapeños under cold water, then slice into 1/4 inch (6 mm) rings. Remove seeds for less heat if desired.
  2. Lightly crush the garlic cloves with the flat side of a knife, keeping them mostly whole.
  3. In a small saucepan, combine white vinegar, water, sugar, and kosher salt. Bring to a low boil, stirring to dissolve sugar and salt.
  4. Place jalapeño rings into a clean pint-sized glass jar, layering in crushed garlic, oregano sprigs, and optional peppercorns. Do not pack too tightly.
  5. Pour the hot brine over the jalapeños and herbs until fully submerged, leaving about 1/2 inch headspace.
  6. Seal the jar tightly and let cool to room temperature on the counter.
  7. Refrigerate for at least 24 hours before tasting; flavor improves after 2-3 days.
  8. Keep refrigerated and consume within 4 weeks for best flavor and crunch.
