Instructions

  1. Heat 2 tablespoons (28 grams) of unsalted butter in a large pot over medium heat. Add 3 popcorn kernels to test the heat; when they pop, add the remaining 1/2 cup (90 grams) of kernels and cover the pot. Shake the pot gently every 15 seconds to prevent burning. Once popping slows to about 2 seconds between pops, remove from heat (about 4-5 minutes).
  2. Immediately pour the popped popcorn into a large mixing bowl. Melt the remaining 2 tablespoons (28 grams) of butter and drizzle it over the popcorn. Toss gently but thoroughly to coat all the kernels evenly. Sprinkle 1/2 teaspoon sea salt over the popcorn and toss again. Taste and adjust salt as needed.
  3. Place 1 cup (175 grams) of white chocolate chips in a microwave-safe bowl. Microwave in 20-second intervals, stirring after each, until smooth and creamy. Alternatively, melt the chocolate using a double boiler method over simmering water. Stir in 1 teaspoon vanilla extract if using.
  4. Using a spoon or fork, drizzle the melted white chocolate evenly over the buttered popcorn in the mixing bowl. Work quickly so the chocolate doesn’t harden before spreading.
  5. Immediately sprinkle 2 tablespoons each of red and blue sprinkles over the popcorn while the chocolate is still wet, so they stick nicely. Toss gently to distribute colors without breaking the drizzle pattern.
  6. Spread the popcorn out on a parchment-lined baking sheet in an even layer. Let it sit at room temperature for about 20-30 minutes to allow the white chocolate to harden and set. Refrigerate for 10 minutes if faster setting is desired, but avoid leaving it too long to keep popcorn crispy.
  7. Once set, break up any large clusters gently. Serve and enjoy.
