Quick and easy grilled shrimp skewers drenched in a rich garlic butter sauce, perfect for last-minute dinners and summer gatherings.

Ingredients

Scale
  • 1 pound large shrimp (1620 count per pound), peeled and deveined
  • 4 tablespoons unsalted butter, melted
  • 34 fresh garlic cloves, finely minced
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon smoked paprika (optional)
  • 1 tablespoon olive oil
  • Wooden or metal skewers (soaked if wooden)

Instructions

  1. Rinse and pat dry the shrimp thoroughly.
  2. In a small saucepan over low heat, melt the butter. Add minced garlic and cook gently for 1-2 minutes until fragrant but not browned.
  3. Remove from heat and stir in lemon juice, chopped parsley, salt, and pepper. Set aside.
  4. In a bowl, toss shrimp with olive oil, smoked paprika, salt, and pepper. Let marinate for 10-15 minutes.
  5. Thread 4-5 shrimp per skewer, piercing through the thickest part to keep secure.
  6. Preheat grill to medium-high heat (375-400°F). Clean and oil grates.
  7. Grill shrimp skewers for 2-3 minutes per side until opaque and slightly charred.
  8. Brush shrimp generously with warm garlic butter sauce immediately after grilling.
  9. Serve hot, garnished with extra parsley or a squeeze of fresh lemon if desired.

Notes

Soak wooden skewers in water for at least 30 minutes to prevent burning. Do not over-marinate shrimp to avoid mushy texture. Brush garlic butter sauce immediately after grilling for best flavor. Can be cooked on grill pan or broiler if no grill is available. For dairy-free version, substitute butter with vegan butter or olive oil.
