A quick and easy grilled corn recipe featuring a creamy, tangy chili lime butter that adds a smoky, spicy kick perfect for busy weeknights or summer gatherings.

  • 4 ears fresh corn on the cob, husks removed
  • 4 tablespoons unsalted butter, softened
  • Juice of 1 large lime
  • 1 teaspoon chili powder
  • 1 teaspoon honey
  • ½ teaspoon garlic powder (optional)
  • Salt to taste
  • Pinch of freshly ground black pepper
  • Small handful of cilantro, finely chopped (optional)

Instructions

  1. Preheat the grill to medium-high heat (about 375°F/190°C).
  2. In a mixing bowl, combine softened butter, chili powder, lime juice, honey, garlic powder, salt, and black pepper. Mix until smooth and creamy.
  3. Remove husks and silk from the corn and pat dry with a paper towel.
  4. Place the corn directly on the grill grates and turn every 2-3 minutes for even charring, grilling for about 10-12 minutes until golden brown spots appear.
  5. Remove corn from grill and generously slather with the chili lime butter using a basting brush or spoon.
  6. Sprinkle chopped cilantro over the corn for garnish and serve immediately while warm.

Notes

For juicier corn, wrap ears in foil before grilling for 12-15 minutes, turning occasionally. Butter can be made ahead and refrigerated; bring to room temperature before use. For dairy-free, substitute butter with coconut oil or plant-based margarine. Adjust chili powder or add cayenne/jalapeños for more heat.
