Flavorful Coffee-Rubbed Ribeye with Garlic Herb Butter

A bold and comforting ribeye steak rubbed with a unique coffee spice blend and topped with a creamy garlic herb butter. Quick and easy to prepare, perfect for weeknights or special occasions.

  • 2 tablespoons ground coffee (medium roast)
  • 1 tablespoon paprika (smoked paprika optional)
  • 1 tablespoon packed brown sugar
  • 1 teaspoon chili powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon sea salt (coarse kosher salt preferred)
  • 1/2 teaspoon garlic powder
  • 1/2 cup (113g) unsalted butter, softened (European-style preferred)
  • 2 cloves fresh garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves, chopped
  • 1 teaspoon fresh lemon juice
  • Salt and black pepper, to taste
  • 12 oz (340g) ribeye steak, 1 to 1.5 inches thick (USDA Choice or better recommended)
  • 1 tablespoon olive oil for searing

Instructions

  1. Prepare the Coffee Rub: In a small bowl, combine ground coffee, paprika, brown sugar, chili powder, black pepper, sea salt, and garlic powder. Stir until evenly mixed.
  2. Season the Ribeye: Pat the steak dry with paper towels. Drizzle olive oil over the steak and rub evenly on both sides. Sprinkle the coffee rub generously, pressing gently into the meat. Let sit at room temperature for 15-20 minutes.
  3. Make the Garlic Herb Butter: Mix softened butter with minced garlic, parsley, thyme, lemon juice, salt, and pepper in a bowl. Combine thoroughly, transfer to parchment or plastic wrap, roll into a log, and chill for about 15 minutes until firm but spreadable.
  4. Heat Your Skillet: Place a cast iron skillet on medium-high heat and let it get hot (about 5 minutes) until it smokes lightly.
  5. Sear the Ribeye: Place the steak in the hot skillet and cook undisturbed for about 4 minutes. Flip using tongs and cook another 3-4 minutes for medium-rare (internal temp ~130°F/54°C). Avoid pressing down on the steak.
  6. Rest the Steak: Remove steak from pan, transfer to a plate, tent loosely with foil, and rest for 5-7 minutes.
  7. Serve with Garlic Herb Butter: Slice the garlic herb butter into rounds and place on top of the hot steak to melt slowly.

Notes

Use freshly ground medium roast coffee for best flavor and crust. Let the steak rest after cooking to retain juiciness. For a little char, finish in a 400°F oven for 2-3 minutes after searing. Use tongs to flip steak to avoid losing juices. For dairy-free, substitute plant-based butter and omit lemon juice if it curdles.
