  • 1 large untreated cedar plank, about 12 x 8 inches (30 x 20 cm), soaked in water for at least 1 hour

  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh dill or parsley, chopped (optional garnish)

Instructions

  1. Soak the cedar plank in water for at least 1 hour (up to 3 hours if possible) to prevent burning and create smoky steam.
  2. In a small bowl, whisk together maple syrup, Dijon mustard, lemon juice, minced garlic, and olive oil to prepare the glaze.
  3. Pat salmon fillets dry with paper towels and season both sides generously with salt and freshly ground black pepper.
  4. Preheat grill to medium heat (around 350°F / 175°C). Clean and oil the grates to prevent sticking.
  5. Remove cedar plank from water and pat dry. Place it on the grill grates. Arrange salmon fillets skin-side down on the plank and brush tops with a generous layer of maple glaze.
  6. Close grill lid and cook salmon for 20-25 minutes, brushing with more glaze every 7-8 minutes. Salmon is done when it flakes easily and reaches an internal temperature of 145°F (63°C). Watch for flare-ups due to glaze dripping.
  7. Remove plank from grill carefully using tongs or oven mitt. Let salmon rest for 5 minutes. Sprinkle with chopped fresh dill or parsley before serving.
