Instructions

  1. Prepare the marinade: In a large mixing bowl, combine bourbon, brown sugar, minced garlic, apple cider vinegar, olive oil, chopped thyme, and rosemary. Whisk until sugar dissolves, about 5 minutes.
  2. Slice the peaches: Peel if desired and thinly slice the peaches. Add to the marinade and stir gently to coat.
  3. Marinate the pork chops: Season pork chops with kosher salt and black pepper. Place chops in the marinade with peaches, ensuring they are well coated. Cover and refrigerate for at least 20 minutes, up to 2 hours.
