  • 1 cup (200 g) granulated sugar
  • ¼ cup (60 ml) pumpkin puree (canned, not pie filling)
  • 2 teaspoons pumpkin pie spice (or 1 teaspoon cinnamon, ½ teaspoon nutmeg, ¼ teaspoon cloves, and a pinch of ground ginger)

Instructions

  1. Combine water and sugar in a small saucepan and stir gently over medium heat until the sugar dissolves completely, about 3-4 minutes.
  2. Lower heat to medium-low and whisk in pumpkin puree and pumpkin pie spice until blended smoothly.
  3. Simmer gently on low heat for about 5 minutes, stirring occasionally to thicken slightly without boiling vigorously.
  4. Remove from heat and let cool for 10-15 minutes. Optionally strain through a fine mesh strainer for a smoother syrup.
