  • 8 slices of soft white or whole wheat sandwich bread, crusts removed (can use gluten-free bread if preferred)
  • ½ cup (125 ml) almond butter, smooth or crunchy
  • ¼ cup (60 ml) strawberry jam, preferably all-fruit or low-sugar
  • Optional: drizzle of honey or maple syrup for extra sweetness

Instructions

  1. Lay out 8 slices of sandwich bread on a clean surface and carefully trim off the crusts (about 5 minutes).
  2. Spread about 1 tablespoon (15 ml) of almond butter evenly on one side of 4 bread slices, leaving a ¼ inch (0.6 cm) border around the edges.
  3. Spread about 1 teaspoon (5 ml) of strawberry jam in the center of the other 4 slices, avoiding the edges.
  4. Place the almond butter slices on top of the jam slices, almond butter side down, matching edges as best as possible. Press gently but firmly to bond the sandwich layers (about 3 minutes).
  5. Use a round cookie cutter or glass to cut out sandwich circles and press down firmly to seal the edges. Optionally, press edges with a fork for extra sealing and a decorative pattern.
  6. Place sandwiches on a plate or airtight container. Wrap individually if not serving immediately and refrigerate for up to 3 days or freeze for up to 3 months.

Notes

Use bread that is a day or two old for best softness and structure. Press edges firmly to prevent jam leakage. Chill runny jam before spreading. Warm thick almond butter slightly for easier spreading. Optional to lightly toast bread for more structure. Wrap sandwiches individually for storage. Can substitute almond butter with peanut butter or sunflower seed butter for nut allergies.
