A quick and easy microwave mac & cheese recipe perfect for dorm life, using just five simple ingredients and ready in under 10 minutes.

  • 1/3 cup dry elbow macaroni (about 50 grams)
  • 1/2 cup water (120 ml)
  • 1/4 cup milk (60 ml), preferably whole or 2%
  • 1/3 cup shredded cheddar cheese (about 35 grams), sharp or mild
  • Pinch of salt

Instructions

  1. Add the macaroni and water to your microwave-safe mug. Stir gently to submerge the pasta evenly in water.
  2. Microwave uncovered on high for 2 minutes. Pause and stir the pasta to prevent sticking.
  3. Continue microwaving in 1-minute increments, stirring after each, until pasta is tender. This usually takes about 4 to 5 minutes total (6 to 7 minutes for lower wattage microwaves).
  4. Once pasta is cooked and most water is absorbed, stir in the milk and shredded cheddar cheese. Add a pinch of salt.
  5. Microwave for another 30-45 seconds until the cheese melts into a creamy sauce. Stir well to combine.
  6. Let it sit for a minute to thicken slightly before serving. If too thick, stir in a splash of milk.

Notes

Stir pasta every minute during cooking to prevent boil-overs and uneven cooking. Use a tall mug to avoid spills. For creamier texture, add a teaspoon of cream cheese after microwaving. Adjust microwave times based on wattage. Let the mac & cheese rest for a minute to thicken before eating.
