  • 2 cups frozen corn kernels (fresh corn can be used)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 1/2 cups shredded cheese blend (Monterey Jack and Cotija recommended)
  • 2 tablespoons fresh lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 cup chopped fresh cilantro (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the chicken breasts into 1-inch bite-sized chunks. Season with salt, pepper, and half of the chili powder and cumin. Toss to coat evenly.
  3. In a medium bowl, combine mayonnaise, sour cream, garlic powder, lime juice, and the remaining chili powder and cumin. Stir until smooth.
  4. Add the corn kernels to the sauce and stir to coat. Then add the seasoned chicken pieces and mix gently.
  5. Pour the chicken and corn mixture into a 9×13-inch baking dish and spread evenly.
  6. Sprinkle the shredded cheese blend generously over the top.
  7. Bake uncovered for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is bubbly and lightly golden. Tent with foil halfway through if cheese browns too fast.
  8. Remove from oven and sprinkle chopped cilantro on top.
  9. Let the bake rest for about 5 minutes before serving.

Do not overload the baking dish to ensure even cooking. Thaw frozen corn overnight or rinse under warm water to reduce moisture. Taste sauce before mixing and adjust lime or chili powder as desired.
