  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp)
  • 1/2 cup chopped walnuts (50g), lightly toasted
  • 2 tablespoons melted butter (can substitute coconut oil for dairy-free)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your baking dish with butter or nonstick spray.
  2. Toast the walnuts: Place chopped walnuts in a dry skillet over medium heat. Stir frequently for about 3-5 minutes until fragrant and lightly browned. Set aside to cool.
  3. Mix dry ingredients: In a large bowl, combine rolled oats, baking powder, ground cinnamon, and salt. Stir to distribute evenly.
  4. Prepare wet ingredients: In a medium bowl, whisk together milk, maple syrup, egg, vanilla extract, and melted butter until smooth.
  5. Combine wet and dry: Pour the wet mixture into the dry ingredients and stir gently until just combined. The mixture will be pourable.
  6. Add apples and walnuts: Fold in the diced apples and half of the toasted walnuts, saving the rest for topping.
  7. Transfer to baking dish: Pour the mixture into your prepared dish. Sprinkle remaining walnuts evenly over the top.
  8. Bake: Place in the preheated oven and bake for 35-40 minutes until set around the edges and slightly jiggly in the center, with a light golden brown top.
  9. Cool slightly before serving: Let it rest for 5 minutes to firm up and make slicing easier.

Notes

If the top browns too quickly, loosely cover with foil after 25 minutes. Use old-fashioned rolled oats for best texture. Room temperature eggs and milk blend better. Toast walnuts for enhanced flavor and crunch. Let oatmeal cool before serving to firm up. Can substitute walnuts with pecans or almonds. For dairy-free, use plant-based milk and coconut oil instead of butter. Adding dried cranberries or raisins adds nice texture and flavor.
