  • 1 1/2 tablespoons olive oil (extra virgin preferred)
  • 2 teaspoons Tajín seasoning
  • 1/2 teaspoon salt (sea salt or kosher salt)
  • Juice of 1 fresh lime
  • Optional garnish: chopped fresh cilantro or cotija cheese

Instructions

  1. Using a sharp knife, cut each ear of corn into 4 to 6 long wedges, following the natural rows of kernels, keeping the rind attached.
  2. Place the corn ribs in a large mixing bowl. Drizzle with 1 1/2 tablespoons olive oil and toss gently to coat evenly.
  3. Sprinkle 2 teaspoons Tajín seasoning and 1/2 teaspoon salt over the ribs and toss again to distribute spices.
  4. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  5. Arrange the corn ribs in a single layer in the air fryer basket, avoiding overcrowding.
  6. Cook for 8 minutes, then flip each rib using tongs.
  7. Cook for another 6-8 minutes until edges are golden brown and crispy.
  8. Remove from air fryer and immediately squeeze fresh lime juice over the ribs.
  9. Optionally, sprinkle extra Tajín or chopped cilantro on top before serving.

Notes

Pat corn ribs dry after cutting for better crispiness. Preheat air fryer for best results. Flip ribs halfway through cooking to ensure even crisping. If ribs are not crispy enough, increase cooking time by 2-minute intervals watching closely to avoid burning. Leftovers can be reheated in air fryer at 375°F for 3-5 minutes to restore crispiness. Avoid microwaving to keep texture.
