This recipe delivers crispy skin and juicy, flavorful chicken thighs with a bright lemon herb marinade, cooked quickly and easily in an air fryer for a fuss-free weeknight dinner.

  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs / 700g)
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • Optional: pinch of red pepper flakes

Instructions

  1. Prepare the marinade by whisking together lemon juice, olive oil, minced garlic, rosemary, thyme, salt, black pepper, and red pepper flakes if using in a medium bowl.
  2. Pat chicken thighs dry with paper towels. Add chicken to the marinade and turn to coat thoroughly. Cover and refrigerate for at least 30 minutes, up to 2 hours.
  3. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  4. Place chicken thighs skin side down in the air fryer basket without overcrowding.
  5. Cook for 12 minutes, then flip chicken to skin side up using tongs.
  6. Continue cooking for an additional 8-10 minutes until internal temperature reaches 165°F (74°C) and skin is golden and crispy.
  7. Remove chicken from air fryer and let rest for 5 minutes tented loosely with foil before serving.

Notes

Pat chicken dry before marinating for best crispiness. Flip chicken halfway through cooking for even browning. Use a meat thermometer to ensure internal temperature reaches 165°F. If using frozen thighs, thaw completely and pat dry. For extra crispiness, lightly spray with cooking oil before air frying.
