Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Hull and halve about 1 cup (150g) of fresh strawberries. In a bowl, toss them gently with 1 teaspoon olive oil, 1 teaspoon honey, a pinch of cinnamon, and a tiny pinch of sea salt. Spread them evenly on the baking sheet.
  3. Roast the strawberries in the oven for 15-18 minutes, until soft, slightly caramelized, and fragrant. Watch carefully to avoid burning; they should look glossy and tender.
  4. While strawberries roast, whip the ricotta: In a mixing bowl, combine 1 cup (250g) well-drained whole milk ricotta, 2 tablespoons heavy cream, 1 teaspoon lemon zest, and a pinch of sea salt. Use an electric mixer or whisk vigorously until light, fluffy, and smooth, about 3-5 minutes.
  5. Toast 4 thick slices of bread until golden and crispy on the edges but still soft inside, about 3-5 minutes.
  6. Spread a generous layer of whipped ricotta evenly on each toast slice.
  7. Spoon the warm roasted strawberries on top, including some of the syrupy juices.
  8. Drizzle each toast lightly with hot honey.
  9. Optionally, add a crack of fresh black pepper or a few small mint leaves for freshness.
  10. Serve immediately for best texture contrast.
