  • 3 cloves garlic, minced

  • ½ cup chicken broth (120 ml), low sodium preferred
  • ½ cup grated Parmesan cheese (50 g), freshly grated
  • ⅓ cup sun-dried tomatoes, chopped (about 50 g), packed in oil and drained
  • 2 cups fresh baby spinach (about 60 g), loosely packed
  • 1 teaspoon Italian seasoning or dried oregano
  • Optional: ¼ cup cottage cheese, blended until smooth

Instructions

  1. Pat chicken breasts dry and season both sides with salt and pepper. Pound each breast to about ½ inch thickness.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 4-5 minutes per side until golden brown and cooked through. Transfer to a plate and tent with foil.
  3. Lower heat to medium. Add minced garlic to the pan and sauté for about 30 seconds until fragrant.
  4. Pour in chicken broth and scrape up browned bits from the pan bottom.
  5. Add heavy cream, Parmesan cheese, and Italian seasoning. Simmer gently, stirring often, until sauce thickens slightly, about 4-5 minutes.
  6. Stir in sun-dried tomatoes and fresh spinach. Cook until spinach wilts, about 2-3 minutes. Fold in blended cottage cheese if using.
  7. Return chicken breasts to the pan, spoon sauce over them, and simmer together for 2-3 minutes to meld flavors. Adjust seasoning if needed.
  8. Serve immediately, garnished with fresh basil leaves and extra Parmesan if desired.

Pounding chicken breasts ensures even cooking and tenderness. Use moderate heat to avoid burning chicken or curdling sauce. Sun-dried tomatoes packed in oil add more flavor; soak dry ones in warm water before use. For a lighter or dairy-free version, substitute cream with half-and-half or coconut cream and Parmesan with nutritional yeast. Leftovers keep well refrigerated for up to 3 days and freeze well in portions.
