  • 1 tablespoon honey or maple syrup (15ml)
  • ½ teaspoon vanilla extract (2.5ml)
  • Pinch of salt
  • ¾ cup fresh strawberries (about 120g), sliced
  • 1 teaspoon lemon juice (5ml)
  • 1 teaspoon sugar or sweetener (5g), optional
  • ¼ cup graham cracker crumbs (30g) (or crushed digestive biscuits)
  • 1 tablespoon butter (14g), melted
  • 1 teaspoon brown sugar (5g)
  • ¼ teaspoon cinnamon (optional)

Instructions

  1. Prepare the graham crumble: Preheat oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, brown sugar, and cinnamon in a small bowl until evenly coated. Spread on a baking sheet and bake for 8-10 minutes, stirring halfway through. Let cool completely. Alternatively, toast on stove over medium heat for 5-7 minutes, stirring constantly.
  2. Macerate the strawberries: Toss sliced strawberries with lemon juice and sugar (if using) in a small bowl. Let sit for 10-15 minutes to release juices.
  3. Mix the overnight oats base: Whisk softened cream cheese until smooth. Add Greek yogurt, honey, vanilla extract, and salt. Stir in rolled oats and milk until combined. Add more milk if mixture is too thick.
  4. Layer the oats: Spoon half the oat mixture into a jar or container. Add half the macerated strawberries with some juice. Top with remaining oat mixture. Seal and refrigerate overnight or at least 6 hours.
  5. Add the crumble and serve: Before eating, stir the oats if desired and sprinkle cooled graham crumble on top. Add extra fresh strawberries or honey if preferred.

Notes

Soften cream cheese before mixing to avoid lumps. Toast graham cracker crumbs carefully to avoid burning. Add crumble just before serving to keep it crunchy.
