  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 680 grams)
  • Salt and black pepper (about 1/2 teaspoon salt and 1/4 teaspoon pepper per side)
  • 2 tablespoons olive oil (extra virgin recommended)
  • 1/3 cup chopped sun-dried tomatoes (oil-packed preferred)
  • 3 cloves garlic, minced
  • 1 cup chicken broth (240 ml, low sodium recommended)
  • 1 cup heavy cream (240 ml; half-and-half can be used for lighter sauce)
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • A handful fresh basil, chopped (for garnish)
  • Red pepper flakes (optional, a pinch)

Instructions

  1. Pat 4 boneless, skinless chicken breasts dry with paper towels. Season both sides generously with salt and black pepper.
  2. Heat 2 tablespoons olive oil over medium-high heat in a large skillet. When shimmering, add chicken breasts. Cook 5-6 minutes on first side without moving until golden brown. Flip and cook another 5 minutes until cooked through (internal temp 165°F / 74°C). Remove chicken and set aside tented with foil.
  3. Reduce heat to medium. Add minced garlic and 1/3 cup chopped sun-dried tomatoes to the pan. Stir frequently for 1-2 minutes until fragrant, careful not to burn garlic.
  4. Pour in 1 cup chicken broth and bring to a simmer, scraping browned bits from pan bottom. Let reduce slightly for about 3 minutes.
  5. Lower heat to medium-low. Pour in 1 cup heavy cream and stir. Add 1/2 cup freshly grated Parmesan cheese and 1 teaspoon dried Italian herbs. Stir gently until cheese melts and sauce thickens slightly, about 4-5 minutes. Sauce should coat back of spoon but remain pourable.
  6. Return chicken breasts to pan, nestle into sauce, and spoon sauce over top. Simmer gently for 3-4 minutes to meld flavors and warm chicken through.
  7. Sprinkle fresh chopped basil and optional red pepper flakes. Serve immediately.

Notes

Do not overcrowd the pan when searing chicken to maintain a good crust. Pat chicken dry before cooking. Adjust heat carefully to avoid curdling cream. Use freshly grated Parmesan for best sauce texture. If sauce thickens too much, add broth or cream to loosen. Leftovers store well in fridge up to 3 days; reheat gently on stovetop with splash of broth or cream.
