  • 1 cup (240 ml) chicken broth
  • 3/4 cup (180 ml) heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • Pinch of red pepper flakes (optional)
  • A handful of fresh basil, chopped

Instructions

  1. Pat dry chicken breasts and season both sides generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Add chicken breasts and cook 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and set aside.
  3. Reduce heat to medium and add butter to the skillet. Once melted, sauté minced garlic and chopped sun-dried tomatoes for 1-2 minutes until fragrant but not browned.
  4. Pour in chicken broth, scraping up browned bits from the pan. Stir in heavy cream, dried Italian herbs, and red pepper flakes if using. Simmer gently for 3-4 minutes until sauce thickens slightly.
  5. Stir in grated Parmesan cheese until sauce is creamy and rich. Adjust seasoning with salt and pepper as needed.
  6. Return chicken breasts to the skillet, spoon sauce over them, and simmer together for 2-3 minutes to absorb flavors.
  7. Remove from heat and sprinkle chopped fresh basil over the dish.
  8. Serve warm with sauce spooned generously over the chicken.

Notes

Let the chicken rest a couple of minutes off heat before serving to keep it juicy. If the sauce becomes too thick, stir in a splash more chicken broth or cream to loosen it.
