A cozy and creamy overnight oats recipe featuring rolled oats, toasted pecans, and pure maple syrup for a comforting and easy breakfast.

Ingredients

Scale
  • 1/2 cup (45g) rolled oats (old-fashioned)
  • 3/4 cup (180ml) milk of choice (whole milk, almond, or oat milk)
  • 2 tablespoons Greek yogurt or cream cheese (optional)
  • 2 tablespoons maple syrup (100% pure)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • Pinch of salt
  • 1/4 cup (30g) chopped pecans, toasted

Instructions

  1. Toast the pecans (optional but recommended): Heat a dry skillet over medium heat and add the chopped pecans. Stir frequently for 3-5 minutes until fragrant and lightly browned. Set aside to cool.
  2. Mix the base: In your jar or bowl, combine rolled oats, milk, Greek yogurt or cream cheese, maple syrup, vanilla extract, cinnamon, and a pinch of salt. Stir well to coat the oats evenly.
  3. Add pecans: Stir in about 2 tablespoons of the toasted pecans, reserving some for topping in the morning.
  4. Seal and refrigerate: Cover with a lid or plastic wrap and refrigerate for at least 6 hours, preferably overnight.
  5. Serve: In the morning, gently stir the oats. Add a splash of milk if desired for a looser texture. Top with remaining toasted pecans and an extra drizzle of maple syrup if desired.
  6. Enjoy: Spoon into a bowl or eat straight from the jar.

Notes

Toast pecans to enhance flavor and crunch. Use Greek yogurt or cream cheese for extra creaminess. Add a pinch of salt to balance sweetness. Adjust milk amount in the morning for preferred consistency. Can add chia seeds before soaking for extra texture. Store leftovers in fridge up to 3 days or freeze up to 1 month.
