  • 1 cup long grain white rice
  • 2.5 cups chicken broth (low sodium preferred)
  • 4 ounces cream cheese, softened
  • 1 envelope onion soup mix (about 1 ounce)

Instructions

  1. Trim any excess fat from the chicken. Leave whole or cut into large chunks if desired.
  2. Pour uncooked long grain rice evenly across the bottom of the crockpot insert.
  3. Pour chicken broth over the rice. Sprinkle onion soup mix evenly on top. Do not stir.
  4. Nestle chicken pieces over the rice and broth mixture without stirring.
  5. Cut softened cream cheese into small dollops and scatter on top of the chicken.
  6. Cover and cook on LOW for 4-5 hours until chicken is cooked through and rice is tender but not mushy. Check at 4 hours to prevent overcooking.
  7. Once done, gently stir everything together to combine the melted cream cheese and broth into a silky sauce. Taste and adjust seasoning with salt and pepper if needed.

Notes

Do not rinse the rice before cooking to retain starches that thicken the sauce. Layer ingredients without stirring to avoid mushy rice. Use chicken thighs for juicier meat. Check liquid levels at 4 hours and add broth if rice looks dry. Adjust seasoning after cooking to avoid over-salting.
