A quick and easy keto-friendly casserole featuring tender chicken, creamy cheese sauce, and crispy bacon, perfect for comforting low-carb meals.

Ingredients

Scale
  • 3 cups cooked chicken, shredded or diced
  • 8 slices bacon, cooked crisp and chopped
  • 8 oz (226g) cream cheese, softened
  • 1 ½ cups shredded sharp cheddar cheese
  • ½ cup sour cream
  • 1 packet ranch seasoning mix or 2 tablespoons homemade
  • 3 stalks green onions, thinly sliced
  • 1 teaspoon garlic powder (optional)
  • Black pepper to taste
  • Optional: ½ cup cooked cauliflower rice or chopped broccoli

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your casserole dish or spray with nonstick cooking spray.
  2. Cook the bacon in a skillet over medium heat until crisp, about 6-8 minutes. Drain on paper towels, then chop into small pieces. Save a teaspoon of bacon grease for added flavor if desired.
  3. Prepare the chicken by shredding or dicing 3 cups of cooked chicken (rotisserie chicken recommended for speed).
  4. In a large bowl, combine softened cream cheese, sour cream, ranch seasoning, and garlic powder. Blend until smooth and creamy using a hand mixer or spatula.
  5. Stir in shredded cheddar cheese, cooked chicken, and chopped bacon (reserve some bacon pieces for topping). Mix gently to coat evenly.
  6. Add thinly sliced green onions and fold in optional cooked cauliflower rice or chopped broccoli if using.
  7. Transfer the mixture evenly into the prepared casserole dish.
  8. Bake uncovered for 25-30 minutes until bubbly and golden on top. For extra crispiness, broil for 2-3 minutes at the end, watching closely.
  9. Let the casserole rest for 5 minutes before serving to allow flavors to meld.

Notes

Use cooked chicken to avoid overcooking during baking. Let cream cheese soften before mixing to avoid lumps. Crisp bacon adds essential smoky crunch; reserve some for topping. Avoid overbaking to keep chicken moist. For a smoother sauce, blend cream cheese and sour cream with ranch seasoning before adding chicken. Microwave casserole for 5 minutes before baking to speed heating if desired.
