A quick and easy compound butter recipe featuring fresh garlic scapes that adds a creamy, mild garlic flavor to steak and other dishes.

  • 1/2 cup (115g) unsalted butter, softened
  • 45 garlic scapes, finely chopped (about 2 tablespoons)
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon sea salt
  • Pinch of freshly ground black pepper

Instructions

  1. Rinse the garlic scapes and pat dry. Trim the ends and finely chop about 4-5 scapes until you have roughly 2 tablespoons. Chop 1 tablespoon fresh parsley.
  2. Soften the butter by leaving it out at room temperature for about 30 minutes or gently soften in the microwave for 10 seconds.
  3. In a medium bowl, combine the softened butter, chopped garlic scapes, parsley, lemon juice, sea salt, and black pepper. Mix thoroughly until well combined and creamy.
  4. Spoon the mixture onto plastic wrap or parchment paper. Roll into a log about 1.5 inches in diameter and twist the ends to seal.
  5. Chill in the refrigerator for at least 1 hour to firm up, or freeze for 20-30 minutes if short on time.
  6. Slice into 1/4-inch thick rounds and serve on hot grilled steak or other dishes.

Notes

Use softened, not melted butter for best texture. Finely chop garlic scapes to avoid overpowering bites. Chill butter well before slicing to maintain shape. For vegan version, substitute with high-quality plant-based butter.
