  • 2 large English cucumbers (thin-skinned and less seedy)
  • 1 cup plain Greek yogurt (full-fat preferred)
  • 2 tablespoons mayonnaise (vegan mayo for dairy-free)
  • 2 tablespoons everything bagel seasoning (store-bought or homemade)
  • 2 tablespoons fresh dill, finely chopped (optional)
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • ¼ cup toasted sunflower seeds
  • 2 tablespoons toasted white sesame seeds

Instructions

  1. Wash and dry the cucumbers. Slice them thinly, about 1/8 inch (3 mm) thick. Optionally scoop out seeds before slicing to reduce moisture.
  2. Heat a dry skillet over medium heat. Toast the sunflower seeds for 2-3 minutes, stirring frequently until golden and fragrant. Remove and toast the sesame seeds for 1-2 minutes. Let cool.
  3. In a mixing bowl, whisk together Greek yogurt, mayonnaise, lemon juice, garlic powder, salt, and pepper until smooth and tangy.
  4. Fold in the everything bagel seasoning and chopped dill into the dressing.
  5. Add the sliced cucumbers to the bowl and toss gently to coat without bruising, about 2 minutes.
  6. Sprinkle the toasted seeds over the salad just before serving to maintain crunch.
  7. Serve immediately for maximum crunch or refrigerate for 15-20 minutes to let flavors meld. Drain excess liquid if needed before serving.

Notes

Use English cucumbers for less moisture and better crunch. Toast seeds carefully to avoid burning. Add seeds last to keep them crunchy. Salad can be refrigerated for up to 2 days but best fresh. Variations include swapping seeds or adding herbs and spices.
