  • ½ cup (120ml) heavy cream or coconut cream, whipped until soft peaks
  • 2 ounces (60g) dark chocolate chips or chopped chocolate, melted and cooled (optional)
  • 1 cup (150g) fresh berries such as raspberries, blueberries, or sliced strawberries
  • Optional garnish: fresh mint leaves, cocoa nibs, or shaved chocolate

Instructions

  1. Melt the dark chocolate chips gently over a double boiler or in short bursts in the microwave, stirring between each burst until smooth. Set aside to cool slightly (about 5 minutes).
  2. Place cottage cheese, cocoa powder, honey, and vanilla extract in a blender or food processor. Blend on high for 2-3 minutes until completely smooth and creamy with no visible curds.
  3. In a chilled mixing bowl, whip the heavy cream to soft peaks using an electric mixer or whisk.
  4. Stir the melted chocolate into the blended cottage cheese mixture until fully incorporated and glossy.
  5. Gently fold the whipped cream into the chocolate-cottage cheese mixture using a rubber spatula with light, sweeping motions to keep the mousse airy.
  6. Spoon the mousse into serving glasses or bowls. Cover and refrigerate for at least 1 hour to let flavors meld and mousse firm up slightly.
  7. Just before serving, top each mousse with fresh berries and optional garnish like mint leaves or shaved chocolate.

Notes

Use small-curd cottage cheese for smoother blending. If mousse is too thick, add a splash of milk or cream to loosen. Chill for at least 1 hour for best texture and flavor melding. For quicker chilling, freeze for 20 minutes but avoid freezing solid. For dairy-free, substitute cottage cheese with silken tofu or coconut-based yogurt and use coconut cream instead of heavy cream.
